canned tomatoes

🥗Healthier: fresh tomatoes

🥗Healthier: turkey sausage

💰Cheaper: pork sausage

Turkey sausage is lower in fat, while pork sausage is generally less expensive.

1

Heat a large pot over medium heat and add olive oil.

2

Season pork neck bones with salt and pepper, then add them to the pot and brown on both sides.

3

Brown the Italian sausage in the same pot until colored.

4

Remove the browned meats and set them aside for later.

5

Finely chop one whole white onion and add it to the pot with a couple more teaspoons of olive oil and salt.

6

Sauté the onions until they are super soft and translucent, about 10-15 minutes, adding garlic towards the end and cooking for a couple more minutes.

7

Add two large cans of tomato paste, crushed tomatoes, and tomato puree to the pot.

8

Rinse the empty cans with water and add about 6 to 7 cups of that water to the sauce.

9

Stir in a heaping tablespoon of dried basil, half a teaspoon of oregano, a bay leaf, and a tablespoon of sugar.

10

Add all the browned meat back into the pot, including the meatballs.

11

Bring the sauce to a boil, then reduce the heat to low and cover the pot, letting it simmer all day.

12

Taste and adjust seasoning as needed, adding more salt if necessary.

13

Check for doneness by pulling out the neck bone; the meat should fall off easily.
