Wash and clean the chicken.
Add blended habanero pepper with onions and ginger to the pot.
Add 1 and a half teaspoons of non-seasoning and 1 teaspoon of vegetable seasoning as salt.
Add 1 teaspoon of thyme and 1 teaspoon of curry powder; cover and simmer for about 5 minutes without adding water.
After 5 minutes, add 1 cup of coconut milk and stir gently; cover and cook until properly done, about 20 minutes.
Transfer the chicken to a tray and bake it in the oven.
In a pot, add chicken broth and bring it to a boil.
Add curry powder, thyme, vegetable seasoning, and coconut milk to the pot.
Add boiled rice to the pot, stir, and add 1 teaspoon of salt; cover and cook until done.
In a separate pot, add coconut oil and fry the cooked chicken gizzard until ready, then remove from the pot.
In the same pot, add shrimp and fry until well cooked, then remove from the pot.
Add diced onions to the pot and fry for about 1 minute.
Add diced carrots, red bell pepper, and yellow bell pepper; fry for about 1 minute.
Add frozen mixed vegetables and stir; cover and steam for about 2 minutes.
Add the fried gizzard and shrimp back to the pot; stir everything together.
Add non-seasoning, thyme, curry powder, and salt; stir again and cover to cook for about 2 minutes until vegetables are cooked but still crunchy.
In a clean pan, add coconut oil and a little bit of diced onions; stir.
Add a little bit of mixed vegetables and then add the cooked rice; stir everything together until well mixed.
Transfer the rice to a clean bowl and repeat the process with more coconut oil, diced onions, mixed vegetables, and rice until all is combined.
