Prepare the lemon garlic herb butter by partially melting 1/2 stick of Kerrygold butter, then mixing in 2 teaspoons of garlic paste, 2 tablespoons of garlic infused olive oil, lemon pepper seasoning, lemon zest from half a lemon, 2 tablespoons of chopped parsley, 2 teaspoons of chopped rosemary, and a pinch of red pepper flakes (optional).

Heat a 12-inch cast iron skillet over medium-high heat and add 2 tablespoons of avocado oil.

Once the oil is hot, place the lamb chops in the skillet, laying them away from you to avoid splatter. Cook for about 7-8 minutes total, flipping every couple of minutes for even cooking and to render the fat cap.
