Quinoa flour adds protein while all-purpose flour is more budget-friendly.

Almond flour is healthier, while cornstarch is a cost-effective thickener.
Wash and chop spinach finely.
Slice onions thinly and place in a mixing bowl.
Add gram flour, green chilies, garlic and ginger paste, fresh coriander, asafoetida, turmeric powder, red chili powder, chaat masala, coriander seeds, baking soda, and salt to the bowl.
Sprinkle salt over the mixture and toss to combine.
Gradually add water to form a thick batter.
Heat oil in a deep frying pan over medium heat until hot.
Take small portions of the batter and drop them into the hot oil.
Fry in batches until golden brown, about 4-5 minutes.
Remove pakodas with a slotted spoon and drain on paper towels.
Serve hot with chutney or sauce.
