Methi Masala Khakhra

1/2 cup wheat flour
1/2 cup bajra flour
1/2 cup finely chopped methi (fenugreek)
1 tsp green chili (finely chopped)
1 tsp cumin seeds
1 tsp cornflour
2 tbsp finely chopped coriander
1 tsp chaat masala
1 tsp black pepper powder
salt to taste
3 tbsp oil
water (approximately 1/4 cup)
ghee (for serving)

Start by taking 1/2 cup of wheat flour.

Add 1/2 cup of bajra flour.

Mix in 1/2 cup of finely chopped methi.

Add 1 tsp of finely chopped green chili.

Add 1 tsp of cumin seeds.

Add 1 tsp of cornflour (optional).

Add 2 tbsp of finely chopped coriander.

Add 1 tsp of chaat masala.

Add 1 tsp of black pepper powder.

Add salt to taste, keeping in mind the saltiness from the chaat masala.

Mix all the ingredients well.

Heat 3 tbsp of oil and add it to the mixture.

Mix everything thoroughly until the dough starts to form.

Gradually add water (approximately 1/4 cup) to knead the dough, keeping it tight.

Rest the dough for 10 minutes.

After resting, divide the dough into small portions and shape them into balls.

Flatten each ball into a round shape using a rolling pin or your hands.

Use a bowl to cut the bhakri into a perfect round shape, removing excess dough.

Make impressions on the surface of the bhakri to help it puff up while cooking.

Heat a pan on medium heat and place the bhakri on it.

Cook for about 6-7 minutes, flipping it occasionally to ensure even cooking.

Press down gently on the bhakri while cooking to help it puff up.

Once cooked, apply ghee on both sides of the bhakri for added flavor.

Serve the bhakri with garlic chutney and green chilies.
