Wash the beef liver well and soak it in milk.

Wash the rice to remove starch and cover it with 3 cups of cold water, then put it on the stove to boil.

Peel and chop the onion, then add 3 tablespoons of vegetable oil to a pot and add the chopped onion with a bit of salt.

Cover the onion and let it sauté until translucent.

Once the rice boils, add 1 tablespoon of margarine and a little bit of salt, mix it in, cover, and set to the lowest heat for 15 minutes without uncovering.

Rinse the liver, cut it into 1-inch pieces, and add it to the sautéed onion with about half a cup of water, black pepper, cloves, and a sprinkle of nutmeg.

Cover and let it cook until the liver is tender, adding more water if necessary.

Fluff the rice with a fork once done and mix in the margarine.

Grind the liver using a food processor and mix it back with the rice, adjusting spices as desired.

Heat a frying pan with a little oil and pan-fry the mixture until nicely browned, turning once, then serve with pickles and bread.
