1

Dry roast 1 cup of dalia in a pan without any oil.

2

Add some water to the roasted dalia and stir with a spatula.

3

Wash the dalia several times with cold water to remove excess starch and dirt.

4

Soak the dalia in water for 10 to 12 minutes to reduce cooking time.

5

Cut the cucumber into two sides and peel it to remove bitterness, then slice it thinly.

6

Cut the beans into medium-sized pieces.

7

Cut a tomato into pieces and chop three baby spring onions finely.

8

Heat a frying pan without any oil and add black mustard seeds, cumin seeds, and a pinch of asafoetida, stirring for about 30 seconds until fragrant.

9

Add the cut beans and carrot to the pan and stir to cook them until the raw smell is gone.

10

Add chopped green chili, tomato, spring onions, and salt to taste, along with a little turmeric powder, and stir everything together.

11

Cook the mixture on medium heat until the tomato softens and releases moisture, which will help cook the vegetables.

12

Add half a teaspoon of ginger paste and a handful of chopped capsicum, stirring until the raw smell of ginger disappears.

13

Cover the pan and cook on low heat for 1 to 1.5 minutes to allow the vegetables to cook through.

14

Add 3 cups of hot water to the mixture, as the dalia requires three times its volume in water.

15

Add the soaked dalia to the pan, discarding any extra water, along with a halved green chili for flavor.

16

Add a handful of fresh chopped coriander.

17

Stir everything together and bring to a boil, then check the taste for salt and spice, adjusting as necessary.

18

Cover the pan and cook on low heat for 4 to 5 minutes until everything is well cooked.

19

Open the lid and stir the mixture to ensure even cooking, then cover again and cook for another 2 minutes on low heat.

20

Once cooked, add a handful of rinsed raisins and the previously sprouted mung beans, mixing everything well.
