Toast regular sandwich bread at 400°F for about 10-15 minutes.
Use a food processor to turn the toasted bread into fine crumbs.
In a heavy-bottom saucepan, combine water and sugar, and bring to a boil.
Once boiling, add lemon juice, rose water, and orange blossom syrup to the saucepan.
Cook the syrup for a couple of minutes until it starts to reduce and simmer.
In a separate bowl, mix cold water with corn starch until smooth.
Place the corn starch mixture over medium heat, stirring consistently until it thickens.
Add heavy cream and cream fresh to the thickened mixture and mix until smooth.
Combine the syrup with the bread crumbs until it forms a smooth paste.
Press the mixture into a springform pan.
Pour the cream mixture on top and cover with crushed pistachios.
Chill for 5 to 7 hours before serving.
