Prepare the shortcrust pastry by mixing softened lard, sugar, and egg in a bowl until well combined.
Gradually add water and flour, mixing until a dough forms. Incorporate a pinch of ammonia for desserts.
Wrap the dough in plastic wrap and refrigerate for a while.
In a separate pot, combine water, sugar, and salt, and bring to a boil.
Add the semolina gradually, stirring continuously until it thickens. Remove from heat.
Incorporate egg, vanilla extract, cinnamon, ground candied orange peel, diced candied orange peel, and ricotta into the semolina mixture until smooth.
Roll out the shortcrust pastry and cut into circles.
Place a spoonful of the filling in the center of each circle and fold to seal.
Brush the tops with beaten egg before baking.
Bake in a preheated oven until golden brown.
