Pineapple Holige

Pineapple Holige, also known as Pineapple Obbattu, hails from the southern regions of India, particularly Karnataka. Traditionally made during festivals and special occasions, this sweet flatbread celebrates the tropical fruit's sweetness combined with the rich flavors of jaggery and spices. In modern times, variations have emerged, and it has gained popularity beyond its regional roots, being enjoyed in various Indian households and at celebrations worldwide.

Combine 2 cups of plain flour, 1/4 cup of very fine semolina, a pinch of salt, and a pinch of turmeric powder in a mixing bowl.

Add in 1/2 cup of sesame oil and mix until combined.

Pour in water gradually to form a super soft dough, cover with a wet cloth, and let it rest for 2 hours.

Peel and chop the crownless pineapple into rough small chunks.

In a large pan, dry roast 1/4 cup of very fine semolina and transfer it to a bowl.

In the same pan, add the chopped pineapple, cover them with water, and cook while stirring occasionally for about 8 minutes until softened and water is mostly absorbed.

Let the pineapple cool down completely, then add 1/2 bowl of brown sugar and 1/2 cup of grated coconut, and mix well.

Cook the mixture until it thickens, then add in 2 tbsp of ghee and cardamom powder, and let it cool down.

Make small round balls from the dough, flatten each ball into a small disc, place a generous amount of the pineapple filling in the center, and fold the edges over to seal.

Use a roti pressing machine to flatten the filled dough ball into a thin circle, ensuring to use enough oil for softness.

Cook the rolled holige on a heated griddle until golden brown on both sides, brushing with ghee while cooking.
