Instructions
- 1Heat cooking oil in a large pot over medium heat until shimmering.
- 2Add pork belly and sear until browned on all sides, about 5-7 minutes.
- 3Remove pork and set aside; drain excess oil if necessary.
- 4In the same pot, sauté garlic and onion until fragrant and translucent, about 3-4 minutes.
- 5Return the pork to the pot and add soy sauce, vinegar, and water.
- 6Stir in brown sugar, bay leaves, and peppercorns; bring to a simmer.
- 7Cover and cook on low heat for 1.5 to 2 hours until pork is tender, stirring occasionally.
- 8Add hard-boiled eggs during the last 15 minutes of cooking.
- 9Taste and adjust seasoning with salt and black pepper as needed.
- 10Remove bay leaves before serving.
- 11Garnish with chopped green onions and banana blossom if desired.
- 12Serve with steamed rice.

- 7Taste and adjust seasoning if necessary, adding more soy sauce or sugar as desired.
- 8Remove the bay leaves before serving.
