Buddha's Delight

2 beancurd, cut into strips
6 black fungus
10 dried shiitake mushrooms
100gm Napa cabbage, chopped roughly
1 small carrot, thinly sliced
1 small broccoli, bitesize
1 fresh red chilli, julienned
5 cloves of garlic, minced
10 baby corn, fresh or canned, halved
1 tsp sugar
Sesame oil
Vegetarian oyster mushroom sauce
Oil for cooking
1 heaped tsp cornstarch
1 ½ tbsp dark soy sauce
1 tbsp light soy sauce
4-5 tbsp water (use the soaked mushroom water)

Soak the black fungus in water for about 30 minutes. Wash, then cut/tear them into bite size.

Wash & soak the dried shiitake mushroom in hot water for 30 minutes. Use a mesh strainer to strain the water.

Heat up some oil in a wok over medium flame and pre-fry the beancurd and set it aside.

Remove the excess oil, just leave about 3-4 tbsp in the wok.

Add the garlic, carrot, corn, black fungus and mushroom. Stir fry until fragrant, adding in some oyster sauce and a little water. Allow it to cook for 3 minutes.

Add the broccoli, cabbage and fried bean curd. Stir fry and allow it to cook for a few more minutes. You may add a little more of the mushroom soaked water.

Add in the sugar and sauce mix, little at a time while continuing to combine the vegetables with the sauce. Check on the seasoning. Add in what is necessary.

Finally, add the chilli. Give a final toss and turn off the flame. Do not overcook the vegetables. Serve it hot and enjoy.
