Shape the mixture into small sausage shapes and wrap them in caul fat, ensuring the seam is at the bottom.
Skewer the sausages for easier grilling.
Grill the sausages over charcoal until crispy and cooked through, allowing fat to drip down.
Serve the sausages in pita bread with salad and a squeeze of lemon juice.
