Heat a large pot and add a drizzle of oil.
Add smoked ham to the pot, quantity to taste.
Add red bell pepper and sauté for 1-2 minutes.
Add sofrito and sauté for another 1-2 minutes.
Add beef, pork ribs, and pork chunks to the pot.
Season with salt to taste and add about 3/4 tablespoon of tomato paste, mixing well.
Sear the meat until browned.
Add a handful of cilantro for flavor.
Pour in 4 to 6 cups of chicken broth.
Cook on high heat for 20-25 minutes until the meat is tender.
Add all the vegetables, ensuring they are well arranged in the pot.
Cover and cook on medium heat for 15-20 minutes.
Add three plantains, cut into balls, to the pot.
Add corn cobs and cover for an additional 10 minutes on medium heat.
Check the consistency; if you prefer a soup-like sancocho, adjust the broth accordingly.
Add additional cilantro before serving.
