Crispy Roasted Pork leg

Loosen the skin on the pork leg quarter without removing any fat.

Inject the pork with mojo creole, straining out particles if necessary.

Mix leftover particles from the mojo with the dry rub and apply it to the pork.

Apply ground black pepper and salt under the skin.

Refrigerate the pork overnight, or for at least 18 hours, to dry out the skin.

After refrigeration, freshen up the seasoning with more mojo.

Preheat the Traeger grill to 325 degrees Fahrenheit.

Cook the pork covered for 1.5 hours on the Traeger.

After 1.5 hours, uncover the pork and continue cooking for another 1 to 1.5 hours.

Check the internal temperature; it should reach around 178 to 179 degrees Fahrenheit.

Transfer the pork to the oven preheated to 400 degrees Fahrenheit and cook for an additional 35 minutes.

Check the internal temperature again; it should reach 198 degrees Fahrenheit.

Let the pork rest for 20 to 30 minutes before serving.
