Künefe is a beloved dessert originating from the Middle East, particularly popular in Turkey. Traditionally served warm, it features a delightful combination of crispy kataifi pastry and melted cheese, soaked in a sweet syrup. This dish is often enjoyed during special occasions and celebrations, symbolizing hospitality and sweetness in Turkish culture. Today, künefe has gained international fame, with variations appearing in many countries, showcasing its versatile appeal.

Phyllo dough can be a lighter alternative, while coconut offers a unique flavor.
Prepare kadayıf by covering it with a damp cloth to prevent it from drying out.
To make the şerbet, combine 6 tablespoons of sugar and 6 tablespoons of water in a pot.
Heat the mixture on low until the sugar melts, ensuring it does not boil.
Once the sugar is melted and the mixture is clear, boil for about a minute and add a few drops of lemon juice.
Let the şerbet cool outside while preparing the künefe.
Melt 3 tablespoons of butter or use double clotted cream to wet the kadayıf.
Tear the kadayıf into small pieces and mix it with the melted butter or cream, ensuring not to mush it together.
Prepare the cheese by shredding 80 grams of dil peyniri into strings.
Heat a copper pan (or any pan with a long handle) and butter the bottom with a teaspoon of butter.
Add half of the kadayıf to the pan, pressing it down to create a base.
Add the shredded cheese on top, leaving a centimeter from the edge.
Cover the cheese with the remaining kadayıf, pressing down gently to seal it in.
