Prepare the syrup by combining 6 tablespoons of water and 6 tablespoons of sugar in a saucepan.

Turn on the stove and lower the heat to melt the sugar completely before boiling.

Once the sugar is melted, bring the mixture to a boil for about 1.5 minutes, then turn off the heat and add 8-10 drops of lemon juice.

Melt a little Turkish cream in a pan over low heat, being careful not to melt it too much.

Take 150 grams of kadayif and tear it into smaller pieces by hand.

Rub the melted cream into the kadayif with your hands, ensuring it is well coated without pressing it together too much.

Heat a copper pan over low heat and add half of the prepared kadayif, spreading it evenly and pressing it down slightly.

Layer 80 grams of string cheese over the kadayif base.

Top with the remaining kadayif, pressing it down gently to cover the cheese completely.

While the kunefe is cooking, chop 2 handfuls of pistachios into larger pieces.

Check the kunefe after a few minutes; if one side is browning faster, flip it over carefully using a non-grooved lid.

Add a little butter on top of the kunefe and continue cooking until golden brown, about 12-13 minutes total.
