Slice flatiron steak thinly on the bias against the grain.
Heat avocado oil in a skillet and add minced garlic, minced ginger, and red pepper flakes; cook for 2 minutes.
Add soy sauce and granulated Lakanto to the skillet, along with water, and let the sweetener dissolve.
Remove the sauce from the pan once the sweetener is dissolved.
Add more avocado oil to the pan and heat it up.
Cook the beef in batches, browning both sides until cooked through.
Once the final batch of beef is done, turn down the heat and add the sauce back to the pan, scraping up browned bits.
Sprinkle xanthan gum into the sauce while stirring to avoid clumps, and bring it to a boil to activate the xanthan gum.
Add the cooked beef back to the pan and coat it in the sauce.
Add sliced green onions to the pan and mix well.
