Baked Karanji, also known as Gujiya, is a traditional Indian sweet often prepared during festivals like Holi and Diwali. Today, variations of Karanji can be found across India, with different fillings and cooking methods, but the essence of this beloved dessert remains unchanged.

1 cup grated coconut
1/2 cup milk
1/2 cup sugar
1/2 tsp cardamom powder
4 tbsp milk powder
250 grams all-purpose flour (maida)
2 pinches of salt
2 spoons ghee
water

Take a cup of freshly grated coconut in a kadai.

Add half a cup of milk to the coconut.

Add sugar, half the proportion of grated coconut, and mix well.

Add half a tsp of cardamom powder after the sugar dissolves.

Add 4 tbsp of milk powder (or khoya) to the mixture.

Stir continuously until the mixture dries out and changes color.

Once it forms a lump, switch off the stove and remove it to cool on a plate.

Prepare 'mohan' by heating a spoonful of ghee and adding it to 250 grams of all-purpose flour (maida) with 2 pinches of salt.

Check if the ghee is hot enough by adding a pinch of maida; if it sizzles, it's ready.

Mix the hot ghee into the flour until crumbly.

Gradually add water and knead the dough until smooth, ensuring no lumps remain.

Prepare 'satha' by whisking ghee until it turns white, then add cornflour and mix well.

Remove the satha into a cup once smooth.

Divide the dough into 3 portions and roll each into a roti.

Apply satha on the first roti, place the second roti on top, and apply satha again.

Place the third roti on top and roll them together to stick.

Seal the ends and cut the roll into two halves, then chop each half into small portions.

Roll each portion into puris, pressing down slightly before rolling.

Roll all the puris in the same manner.

Grease an oven tray with ghee and preheat the oven to 180 degrees Celsius for 5 minutes.

Fill each puri with the coconut mixture, folding and pressing to seal them.

Apply ghee on top of the filled Karanjis before baking.

Bake the Karanjis at 180 degrees Celsius for 20 minutes.

Check if Karanjis are done after 20 minutes; they should look nice and crunchy.
