1 teaspoon salt
1 teaspoon black salt
2 tablespoons oil
1/4 cup fresh coriander
1 teaspoon kasuri methi
4 cups water
1/4 teaspoon baking soda

Soak chickpeas overnight for at least 4 hours.

Make a paste by grinding rough chopped onion, ginger, garlic, and green chilies without water.

Heat oil in a pressure cooker and add cumin seeds until they splutter.

Add the onion paste to the cooker and sauté until it changes color and releases oil.

Prepare tomatoes by roughly chopping them and then making a puree.

Continue to sauté the onion paste while adding the tomato puree.

Add turmeric powder, red chili powder, coriander powder, and both regular and black salt; mix well.

Add the soaked chickpeas to the mixture and sauté for 5 minutes.

Pour in water and scrape the sides of the cooker to mix everything well.

Cover the cooker and pressure cook on high heat until the first whistle, then lower the heat and cook for 6-7 whistles.

Let the pressure release naturally for 5-10 minutes before opening the cooker.
