1 tsp amchur (raw mango powder)
1/4 tsp turmeric powder
1/2 tsp garam masala
1/4 tsp chaat masala
1/2 tsp red chili powder
1/2 tsp coriander and cumin seed powder
1.5 tbsp oil
1 tsp cumin seeds
1 piece cinnamon stick
2 cloves
1/2 cup soaked chole
3 cups water
salt

Dry roast 1/2 cup of dry coconut until it changes color, then remove it.

In a grinder, combine the roasted coconut with 1 tsp of amchur, 1/4 tsp turmeric, 1/2 tsp garam masala, 1/4 tsp chaat masala, 1/2 tsp red chili powder, and 1/2 tsp coriander and cumin seed powder.

Dry grind the mixture, then add a little water to make a paste.

In a pressure cooker, heat 1.5 tbsp of oil until hot.

Add 1 tsp cumin seeds, 1 piece of cinnamon stick, and 2 cloves to the oil.

Once the whole spices are cooked, add the masala paste and roast in the oil for a few seconds.

Add 3 cups of water to the cooker.

Add 1/2 cup of soaked chole (drained) and salt to taste, then mix well.

Pressure cook on low flame for 5 whistles.

Turn off the flame and let the pressure cooker cool down completely.

Open the pressure cooker and check the chole; it should have a nice thick gravy.
