1

Start by taking some Onion-Tomato Masala from the store.

2

Add 1 cup of water to the Onion-Tomato Masala.

3

Stir well and allow it to cook for 7 to 8 minutes on medium flame.

4

Add in Chole Masala and some salt; remember that some proprietary ingredients may already contain salt.

5

Allow the spices to cook for a couple of minutes.

6

Open the can of chickpeas, which are already cooked and ready to use, and add them to the pan.

7

Add in the liquid from the can, known as Aquafaba, for added flavor.

8

Allow the mixture to boil on high flame.

9

Mash a couple of chickpeas to release starch and thicken the curry.

10

Let it thicken for another 30-40 seconds; your Chole Masala is now done.

11

Garnish with lots of ginger and coriander, or substitute with parsley if needed.
