Start by washing the salted herring in cold water to remove excess salt.

Prepare the pickling marinade by combining 1 deciliter of vinegar, 2 deciliters of water, and 3 deciliters of sugar in a pot.

Place the pot on the stove to heat while the sugar dissolves in the liquid.

Chop fresh dill and add it to the first container.

Split the leek down the middle and slice it into approximately 2 millimeter thick pieces, using both the green and white parts.

Add the chopped leek to the first container with dill.

For the second container, slice the carrot into thin rounds, as thin as possible.

Add the sliced carrot to the second container.

Slice the red onion into thin slices and add it to the second container with the carrot.

Pat the herring dry with paper towels and cut it into slices about 1 centimeter thick.

Add the herring slices to the respective containers, mixing them with the vegetables.

Crush 6 allspice corns for the second container and add them in, while keeping 6 whole for the first container.

Once the pickling liquid is cooled, pour it over the herring and vegetables in both containers, ensuring everything is covered.

Seal the containers with lids and let them sit for at least 24 hours, preferably longer for better flavor, turning them upside down occasionally.

After 3 days, taste the pickled herring.
