Vinegar pickled herring is a traditional dish in Polish cuisine, often served during festive occasions and holidays. Soak herring fillets in plain water, changing the water every few hours for a day to remove excess salt and fish aroma.
Prepare the brine by pouring water into a pot, followed by white distilled vinegar, sugar, allspice, and bay leaves.
Turn on the heat and stir the mixture until the sugar dissolves.
Once the brine reaches boiling point, cover the pot and let it simmer gently for a few minutes.
Turn off the heat and set the pot aside to cool the brine to room temperature.
Peel and slice the onions into round slices or rings.
Cut the herring fillets into pieces, each large enough for four bites.
Grab a sterilized jar and layer a few slices of onion at the bottom, followed by herring pieces, and continue alternating layers until all ingredients are used.
Place a fermentation weight on top to keep everything submerged (optional).
Once the brine is at room temperature, pour it over the fish and onions using a sieve to strain out the allspice and bay leaves.
Seal the jar and let it sit on the counter for 24 hours, or refrigerate it if preferred.
