Fill the pot with filtered water until the beet is covered.

Put the pot on medium heat and bring it to a boil.

Cook the beet for 45 minutes to an hour until soft enough to peel.

While the beet is boiling, cut the horseradish root into 2.5 to 3-inch pieces.

Peel the skin off the horseradish root.

Cut the horseradish into half-inch squares for easier processing.

Once the beet is cooked, remove it from the pot and place it in a bowl to cool for half an hour.

After the beet has cooled, peel the skin off.

Combine the grated horseradish, the beet, 2 teaspoons of vinegar, and 9 ounces of water in a blender.

Pulse the mixture in the blender until well combined.

Fill jars with the horseradish mixture.
