1/2 cup Medium size Kala Chana (Black Chickpea)
1/8 Tsp Cooking soda
1 Tej patta (Bay leaves)
1/2 Tsp salt
2 cup water
1 Tsp oil
3 to 4 Tbl sp oil
1/4 Tsp Hing (Asafoetida)
2 Medium Size Onion Grated
4 to 5 Lasun ki Paste(Garlic)
1 Big size Adrak Paste(Ginger)
2 Tsp Kashmiri Red chilly powder
1/4 Tsp Haldi powder(Turmeric powder)
1 Tsp Dhania jeera powder (Coriander & cumin seed powder)
1/2 Tsp Chole Masala(Optional)
1/4 cup water
2 Medium Size Tomato Grated
3/4 cup Hot water
1 Tsp salt
3/4 Tsp Garam Masala Powder
2 to 3 Tbl sp Hara Dhania finely chopped(Green coriander leaves finely chopped)
1 Tsp Deshi Ghee

Soak the Kala Chana overnight or for at least 8 hours.

In a pressure cooker, add the soaked Kala Chana, cooking soda, bay leaves, and 2 cups of water. Pressure cook for about 15-20 minutes until soft.

In a pan, heat 3 to 4 tablespoons of oil. Add hing, grated onions, and sauté until golden brown.

Add garlic and ginger paste, and sauté for a few minutes until the raw smell disappears.

Stir in Kashmiri red chili powder, turmeric powder, coriander and cumin seed powder, and optional chole masala. Cook for a minute.

Add grated tomatoes and cook until the oil separates from the mixture.

Add the cooked Kala Chana along with 1/4 cup of water and salt. Mix well and simmer for a few minutes.

Add garam masala and chopped green coriander leaves. Stir well and cook for another minute.

Serve hot with roti, puri, paratha, or naan.
