Singhara Ka Halwa

1 cup singhara flour (water chestnut flour)
1/2 cup ghee (clarified butter)
1 cup sugar
2 cups water
1/4 cup milk
1/2 tsp cardamom powder
1/4 cup chopped nuts (almonds, cashews)
1/4 cup raisins

Heat ghee in a pan over medium heat.

Add the singhara flour to the ghee and roast it until it turns golden brown and aromatic, stirring continuously.

In a separate pot, bring water to a boil and add sugar to it, stirring until dissolved.

Once the flour is roasted, slowly add the sugar syrup to the pan, stirring continuously to avoid lumps.

Add milk and mix well, cooking until the mixture thickens and starts to leave the sides of the pan.

Stir in the cardamom powder, chopped nuts, and raisins.

Cook for an additional 2-3 minutes, mixing well.

Remove from heat and let it cool slightly before serving.
