1 whole chicken cut into 8-12 pieces
1/4 cup chopped cilantro
1 pound calabasa squash cut into 1.5 to 2 inch pieces
1 cup chopped sweet pepper
2 ears of corn cut into quarters
1 piece chopped large onion
1 medium sized yucca or cassava cut into 1.5 to 2 inch pieces
6 cloves minced garlic
2 pieces medium sized malanga cut into 1.5 to 2 inch pieces
1 teaspoon oregano
1 piece medium sized plantain cut into 1.5 to 2 inch pieces
1 teaspoon cumin
1 tablespoon olive oil
1 teaspoon salt
8 cups water

Add yucca, malanga, plantain, 8 cups of water, and 1 teaspoon of salt; cook covered over medium to high heat for 10 minutes.

Remove the scum to make the broth clear.

Add calabasa squash and cook covered for 4 minutes.

Add corn and cook covered for another 4 minutes or until the vegetables are tender.
