In a large pot, add 5 cups of water and 1 pound of chicken legs or drumsticks (including bone and skin).

Add 1 onion cut in 8 pieces, 1 yuca root diced in squares, 1 medium carrot sliced 1 inch thick, 1 corn on the cob, and 1 sweet potato diced in squares.

In a mortar and pestle, crush salt, cilantro, and 4 cloves of sliced garlic together, then add 2 tablespoons of olive oil and mash together.
