Easy Russian Breakfast Recipe | How To Make Perfect Pancakes - Oladi & Syrniki with Homemade Jam

Originating from Russia, oladi are fluffy pancakes traditionally enjoyed for breakfast or as a snack. They are often served with sour cream, jam, or honey, making them a versatile treat. In modern times, oladi have gained popularity beyond Russia, with various adaptations found in Eastern European cuisines.
Start by making Red Currant Jam: In a saucepan, add red currants and a lot of sugar.
Add 1/3 the amount of water as the sugar.
Mash the red currants and strain the mixture.
Put the strained mixture back in the pan and heat until it reaches 105 degrees.
Transfer the jam into a glass container and let it cool.
For Oladi, mix 1 cup of yogurt and 1 cup of water using a churner.
Add 2 eggs and mix well.
Add 4 tbsp of sugar and mix again.
Add 1 cup of flour, 1 tsp of salt, and 1 tsp of baking soda, and mix roughly.
Cook on medium flame in generous amounts of oil, pouring 1 tbsp of batter at a time.
Remove the cooked pancakes onto an absorbent cloth.
For Syrniki, grate 500 grams of cottage cheese and mix with 2 eggs and 4 tbsp of sugar.
Add 1 tsp of vanilla essence and mix.
Add 2 tbsp and 1/2 tbsp more flour, and 1 tsp of salt.
Roll the sticky dough into spheres, then flatten slightly to make patties.
Cook the patties on medium heat in generous amounts of oil until browned.
