Boil water in a pot and place a greased perforated steamer on top with a lid.

In a large bowl, combine 1 and 1/2 cups of wheat flour and 3 tablespoons of gram flour.

Add coriander powder, cumin seed powder, red chili powder, turmeric powder, sugar, ginger and chili paste, and a big pinch of baking soda to the flour mixture.

Mix all these dry ingredients together.

Add lemon juice and oil to the mixture and mix well.

Add grated bottle gourd to the mixture and combine thoroughly.

Add salt to the mixture, and note that the bottle gourd will release water, so do not add extra water to bind the dough.

Apply a little oil to your palms and form the mixture into a cylindrical roll.

Place the roll in the steamer and cover it.

Steam for 20 to 25 minutes, checking for firmness to ensure they are ready.

Once steamed, let the rolls cool completely before slicing them into thin pieces.

For tempering, heat some oil in a pan, and once hot, add mustard seeds, sesame seeds, curry leaves, and a red chili.

Add the sliced muthia to the pan and toss them for 3 to 4 minutes until they have nice brown edges.

Garnish with chopped coriander leaves and serve.
