2 pieces toasted pita bread
3 tablespoons olive oil
1 medium cucumber
2 medium tomatoes
4 cups mixed greens (iceberg lettuce)
1 medium bell pepper (capsicum)
1/2 cup fresh parsley
3 green onions (spring onion)
1/4 cup fresh mint leaves
1 clove garlic
3 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon black pepper

Brush olive oil on both sides of the P bread.

Cook the P bread on a hot tawa until crisp and golden brown, or bake it if preferred.
