Preheat the oven to 350°F.
In a mixing bowl, sift together all-purpose flour, baking powder, and a pinch of salt.
Add white sugar and brown sugar to the dry ingredients and mix well.
Add one whole egg and almond extract to the mixture and incorporate well.
Melt unsalted butter slightly in the microwave and add to the mixture, incorporating with hands.
Add only the egg white from the whole egg and mix until a dough forms.
Form medium-sized balls of dough, about 20 cookies total, spacing them apart on the baking sheet.
Make an indentation in the center of each cookie ball and place a sliced almond in the indentation.
Brush the tops of the cookies with the egg yolk.
Bake in the preheated oven for 15 minutes until golden brown.
Remove from the oven and let cool on a wire rack for 5-10 minutes.
