The dish reflects the Bedouin influence in Kuwaiti cuisine, emphasizing the use of spices and cooking techniques that have been passed down through generations. Preheat the oven to 350°F (175°C).
Soak the rice in water for 30 minutes, then drain.
Heat olive oil in a large pot over medium heat, then add chopped onions and garlic, sautéing until translucent.
Add diced lamb to the pot and brown on all sides, about 5-7 minutes.
Stir in spices, including cinnamon, cardamom, and black pepper, cooking for 2 minutes until fragrant.
Add chopped tomatoes and water to the pot, bringing to a simmer.
Cover and cook the lamb for about 1 hour, until tender.
Layer the soaked rice over the lamb in the pot, spreading evenly.
Pour in enough water to cover the rice by an inch, then bring to a boil.
Reduce heat to low, cover, and cook for 20-25 minutes until rice is tender.
Remove from heat and let rest for 10 minutes, covered.
Fluff the rice with a fork, mixing it with the lamb and juices.
Transfer to a large serving dish, garnishing with toasted pine nuts and almonds.
Serve with a dollop of yogurt on top.
