Heat cooking oil in a large pot over medium heat until shimmering.
Add chopped onion and sauté until translucent, about 5 minutes.
Stir in minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.
Add diced tomatoes and cook until softened, about 5 minutes.
Incorporate chopped green pepper and carrots, stirring for another 3-4 minutes.
Add the offals, stirring to coat with the mixture, and cook for 5 minutes.
Pour in water to cover the ingredients and bring to a boil.
Reduce heat to low, add potatoes, thyme, bay leaves, and season with salt and black pepper.
Cover and simmer for 45 minutes, stirring occasionally until offals are tender.
Add lemon juice and chopped coriander just before serving.
