Put beef shank in a pot and cover with water.
Boil to remove impurities, then drain.
Cover beef shank again with water and add salt, whole black peppercorns, and chopped onion.
Boil for around 90 minutes to 2 hours until tender.

Add fresh egg noodles to the broth to cook.
Toast flour until light brown and fragrant, then transfer to a bowl.
Add a cup of broth, soy sauce, and fish sauce to the toasted flour and let it simmer.
Whisk the mixture until it thickens.
Plate the dish by adding gravy to the bottom of the bowl, followed by noodles, pieces of meat (including bone marrow), broth, and garnish with green onions and hard-boiled eggs.
