1 teaspoon of vanilla extract
~ 1/2 cup of light olive oil (120ml)
~ 3/4 cup of milk (190ml)
zest of 1 orange
1 cup of fine semolina (180g)
~ 3 tablespoons of cocoa powder (25g)
~ 3 and 1/2 tablespoons of desiccated coconut (20g)
~ 1 tablespoon of baking powder (16g)
100g sugar-free milk chocolate or dark chocolate

Beat 3 medium eggs with ~ 2/3 cup of erythritol and 1 teaspoon of vanilla extract until pale yellow and fluffy.

Gradually add ~ 1/2 cup of light olive oil and ~ 3/4 cup of milk.

Add the zest of 1 orange.

Mix in 1 cup of fine semolina and ~ 3 tablespoons of cocoa powder, followed by ~ 3 and 1/2 tablespoons of desiccated coconut.

The batter will look runny at first, then it will thicken as the semolina absorbs the liquids.

Add ~ 1 tablespoon of baking powder and mix well.

Grease a 24 cm baking mold with butter and sprinkle semolina on it.

Pour the batter into the prepared baking mold.

Bake in a preheated oven at 180º C (356ºF) for 20-25 minutes.

For the sauce, mix ~ 1 and 1/4 cup of milk with 2 tablespoons of cocoa powder and heat until combined.

Add 100g of sugar-free milk chocolate or dark chocolate and melt it.

Once the cake is baked, cut it carefully while hot and add the chocolate sauce.

Let it cool and soak up the sauce, then chill in the refrigerator for 1 hour before serving.
