In a mixing bowl, add 3/4 cup warm whole milk and 1 package of active dry yeast; stir well.
Use a small whisk to help dissolve the yeast.
In another mixing bowl, add 16 ounces of all-purpose flour, 1 tablespoon of pumpkin pie spice, and 1 teaspoon of salt; stir together using a fork.
Add the milk and yeast mixture to the dry ingredients, along with 1 1/2 sticks of melted butter, 2 large eggs, 1 teaspoon of vanilla extract, and 1/2 cup of pumpkin; mix by hand or with a stand mixer until combined.
Cover the dough and allow it to rise in a draft-free area for at least 30 minutes, but no longer than 45 minutes.
After the dough has risen, fold in 8 ounces of Belgian pearl sugar, pressing the sugar bits into the dough as you go.
Lightly brush the surface of your waffle iron with vegetable oil before baking.
Set the waffle iron between 4 and 5 and bake the waffles for about 3 minutes, checking to ensure they are nice and brown; the recipe makes about 8 large waffles.
For the classic pumpkin waffles, repeat the same process but add 1/4 cup of packed brown sugar instead of the pearl sugar.
To make the cinnamon whipped cream, in a chilled mixing bowl, add 1 1/2 cups of heavy whipping cream and beat until soft peaks form.
Add 2 tablespoons of instant white chocolate pudding mix, 1/2 teaspoon vanilla extract, and 1/4 teaspoon cinnamon; mix on low speed for a few seconds, then increase to high speed until thick.
Top the waffles with a dollop of cinnamon whipped cream, sprinkle with extra cinnamon, and drizzle with maple syrup.
