Lamb Cutlets

600 grams lamb shoulder chops
2 tablespoons Worcestershire sauce
2 teaspoons Maggi seasoning
1 tablespoon oyster sauce
1 tablespoon corn flour
1 teaspoon baking soda
2 tablespoons Worcestershire sauce (for sauce)
2 tablespoons Maggi seasoning (for sauce)
1 tablespoon sugar
1 tablespoon light soy sauce
1/2 teaspoon sesame oil

Get the butcher to cut the lamb into thin slices, about one to one and a half centimeters.

Trim off the excess fat from the lamb cutlets.

Cut the lamb into three to four portions, using a cleaver to cut through the bone if necessary.

Combine all the marinade ingredients: Worcestershire sauce, Maggi seasoning, oyster sauce, corn flour, and baking soda.

Prepare the sauce by mixing Worcestershire sauce, Maggi seasoning, sugar, light soy sauce, and sesame oil together.

Grill, pan-fry, or stir-fry the lamb cutlets over medium heat until they turn golden brown on both sides, then remove and set aside.

Pour the sauce into the wok and bring it to a boil.

Add the lamb cutlets to the sauce, mix well, and cook for at least half a minute until the sauce thickens and coats the lamb.
