Koupepia, a traditional dish from Cyprus, reflects the island's rich culinary heritage influenced by both Greek and Turkish cuisines. These stuffed grape leaves are often enjoyed during family gatherings and celebrations, symbolizing hospitality and togetherness. Today, koupepia is cherished not only in Cyprus but also in various Mediterranean regions, showcasing its versatility and appeal.

Soak grape leaves in hot water to soften them for wrapping.
Heat olive oil and sauté the onion until soft.
Add pork and beef mince to the onion and cook until slightly caramelized.
Mix in chopped tomato, parsley, and about 2 tablespoons of mint.
Season with salt, ground cumin, ground cinnamon, and a little bit of coriander.
Add a little bit of tomato puree to the mixture.
Stir in long-grain parboiled rice.
Stuff the grape leaves with the filling and fold them.
Place the stuffed grape leaves in a pot, cover with water, and place a plate on top.
Add lemon juice and olive oil on top.
Cook over gentle heat for 30 minutes.
