Decide to go for the old-world version without tomato.
Brown the lamb in a good amount of olive oil.
Remove the meat and cook the onion and green peppers in the same oil.
Add garlic, using half a head for two people, and cook until soft.
Remove 2-3 cloves of garlic from the pot, peel, and reserve for later.
Add plenty of paprika and white wine to the pot.
Return the meat to the pot and cover with water.
Allow to simmer gently for about an hour and a half until tender, skimming off fat and froth as needed.
Bash up the reserved garlic and a slice of toast to form a paste and incorporate it into the sauce to thicken it.
Taste and adjust seasoning as necessary.
