3 ½ Cups All Purpose Flour (Maida)
½ Cup Ghee (Clarified Butter)
Salt (a pinch)
½ Cup Water
Oil (for deep frying)
1 Cup Khoya (grated)
3 Tbsp Coconut (desiccated)
4 Tbsp Sugar (Fine Grain)
½ Tsp Cardamom Powder
Jaiphal Powder (Nutmeg, a tiny pinch)
Javitri Powder (Mace, tiny pinch)
2 tbsp Almonds & Pista (chopped)

In a pan, add khoya and cook on low heat till it turns light brown.

Once brown, remove from the flame and keep it aside.

In a bowl, mix all purpose flour, ghee, and salt together until the mixture becomes crumbly. Add water and knead it into a dough. Set aside for 30 mins.

In a bowl, add cooked khoya, desiccated coconut, sugar, cardamom powder, jaiphal powder, javitri powder, almonds & pista. Mix them all well together. Break into crumbs if needed.

Now roll out the dough thin about 3mm.

Using a round cutter cut the dough into small discs.

Place a spoonful of stuffing in the center of each disc.

Brush the edges of the disc with water.

Lift from one side and drop it halfway giving it a half moon shape.

Gently tap the edges to seal them.

Using a fork, press down the edges to give it a unique design and also further seal the stuffing inside.

In a deep pan, heat oil. Once the oil is medium hot, add gujia and deep fry them over a low flame until it is a brown color.

Remove and cool it completely before serving.
