Preheat the oven to 350°F degrees and position a rack in the center.
In a bowl, sift together flour, baking powder, and salt.
In another bowl, mix softened butter, ricotta (drained), and sugar for about 2 minutes or until smooth using an electric mixer.
Add eggs, one at a time, and continue mixing.
Combine the dry ingredients with the wet ingredients and add the vanilla extract (optional).
Grease the loaf pan with butter and then spread some flour all around the sides.
Pour the batter into the loaf pan.
Bake the cake for 20 minutes at 350°F degrees, then rotate the pan 180 degrees to ensure even browning.
Lower the temperature to 325°F and continue baking for another 45 minutes.
Let it rest for 15 minutes after taking it out of the oven.
Flip the cake onto the cake stand and enjoy!
