1.5 pounds goat meat
1.5 teaspoons mustard
1 stalk Chinese celery
5 cloves cloves
1 scorpion chili
1 packet all-purpose seasoning
1 teaspoon black pepper
3 sprigs thyme
1/2 onion, cut into slivers
mini bell pepper or Trinidad type seasoning peppers
squeeze of lime

Soak goat meat in lime juice and water overnight, then drain.

Add 1.5 teaspoons mustard, 1 stalk of Chinese celery, 5 cloves, 1 scorpion chili, 1 packet of all-purpose seasoning, 1 teaspoon black pepper, and 3 sprigs of thyme to the goat meat.

Mix the ingredients together and taste for seasoning.

Place the mixture on the stove and cook on low heat until the goat is fork-tender, without adding water.

Once tender, heat a little oil in a pan and fry the goat meat until golden brown.

Layer in half of an onion cut into slivers, mini bell pepper or Trinidad type seasoning peppers, and a squeeze of lime while frying the goat.

Continue frying in batches until all the goat is cooked and layered with the vegetables.
