Chocolate Peanut Butter Granola

1/2 cup maple syrup
1/3 cup cocoa powder
2 large tbsps peanut butter
4 cups oats
1/4 cup granulated sugar
2 cups of mix-ins (nuts, seeds, cacao nibs, raisins, dried fruit, coconut flakes)
2 tsp vanilla extract
pinch of salt

Preheat oven to 350 degrees F.

In a small pot, add coconut oil, maple syrup, cocoa powder, and peanut butter (optional).

On low heat, cook until all ingredients are melted and mix well.

In a large bowl, add oats, granulated sugar, mix-ins, vanilla extract, and a pinch of salt (optional).

Pour the coconut oil mixture into the large bowl and mix all ingredients very well.

Using either parchment paper or a silicone baking sheet, press the mixture onto the baking sheet, spreading evenly.

Cook on the top rack for 10 minutes, then turn the pan around and cook on the bottom rack for another 7-10 minutes, watching carefully to avoid burning.

Remove from oven and allow to cool completely before storing in a container.
