Four Tasty Leftover Roast Beef Recipes

- ●2 lbs beef roast
- ●2 cups beef broth
- ●1 cup water
- ●1 cup rice
- ●1/4 cup soy sauce
- ●1/4 cup all-purpose flour
- ●1/4 cup vegetable oil
- ●1 tsp garlic powder
- ●1 tsp onion powder
- ●1/2 tsp black pepper
- ●1/2 tsp salt
- ●1/2 tsp dried thyme
Instructions
- 1Preheat the oven to 350°F (175°C).
- 2Season the beef roast with garlic powder, onion powder, black pepper, salt, and dried thyme.
- 3In a large oven-safe pot, heat vegetable oil over medium-high heat. Sear the beef roast on all sides until browned.
- 4Remove the roast from the pot and set aside. In the same pot, add the flour and stir to create a roux, cooking for about 2 minutes.
- 5Gradually add the beef broth and water to the roux, stirring constantly to avoid lumps.
- 6Return the beef roast to the pot, cover, and place it in the preheated oven. Roast for about 2 hours or until the meat is tender.
- 7Once the roast is done, remove it from the pot and let it rest for 10 minutes before slicing.
- 8While the roast is resting, add the rice to the pot with the gravy and bring to a boil. Reduce heat, cover, and simmer for 20 minutes or until the rice is cooked.
- 9Slice the roast beef and serve it over the rice with gravy.

- ●1/2 cup mayonnaise
- ●1/4 cup horseradish sauce
- ●1 cup shredded lettuce
- ●1 medium tomato, sliced
- ●1/2 cup pickles, sliced
- ●Salt and pepper to taste

- 1Preheat the oven to 350°F (175°C).
- 2Slice the hoagie rolls in half lengthwise without cutting all the way through.
- 3Spread mayonnaise on the inside of each roll and horseradish sauce on the other side.
- 4Layer the thinly sliced roast beef evenly inside each roll.
- 5Add shredded lettuce, tomato slices, and pickles on top of the roast beef.
- 6Season with salt and pepper to taste.
- 7Wrap each sandwich in aluminum foil and place them on a baking sheet.
- 8Bake in the preheated oven for about 10-15 minutes, or until heated through.
- 9Remove from the oven, unwrap, and serve immediately.

- ●1 cup sorghum, rinsed and drained
- ●4 cups beef broth
- ●1 medium onion, chopped
- ●2 cloves garlic, minced
- ●2 medium carrots, sliced
- ●2 medium potatoes, diced
- ●1 tsp dried thyme
- ●1 tsp paprika
- ●1/2 tsp black pepper
- ●1/2 tsp salt
- ●2 tbsp olive oil
- ●1 bay leaf
Instructions
- 1Heat olive oil in a large pot over medium heat.
- 2Add the beef stew meat and brown on all sides, about 5-7 minutes.
- 3Remove the beef from the pot and set aside.
- 4In the same pot, add the chopped onion and garlic, sauté until softened, about 3-4 minutes.
- 5Add the carrots and potatoes, stirring for another 2-3 minutes.
- 6Return the beef to the pot, then add the sorghum, beef broth, thyme, paprika, black pepper, salt, and bay leaf.
- 7Bring the mixture to a boil, then reduce heat to low and cover.
- 8Simmer for about 1.5 to 2 hours, or until the beef is tender and the sorghum is cooked through.
- 9Remove the bay leaf before serving.
- 10Adjust seasoning if necessary and serve hot.

- ●1 cup shredded cheese (cheddar or your choice)
- ●1/2 cup sour cream (or Greek yogurt)
- ●1/4 cup chopped green onions

- 1Preheat the air fryer to 400°F (200°C).
- 2Wash and peel the russet potatoes, then cut them into thin strips to make fries.
- 3In a large bowl, toss the potato strips with olive oil, garlic powder, onion powder, paprika, salt, and black pepper until evenly coated.
- 4Place the seasoned fries in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
- 5Cook the fries in the air fryer for 15-20 minutes, shaking the basket halfway through to ensure even cooking, until they are golden and crispy.
- 6Once the fries are cooked, remove them from the air fryer and place them on a serving platter.
- 7Sprinkle the shredded cheese over the hot fries, allowing it to melt slightly.
- 8Drizzle sour cream over the cheesy fries and top with chopped green onions.
- 9Serve immediately and enjoy your smothered air fryer French fries!
