Wash the guavas properly and cut each into four pieces, removing any blemishes.

Place a pan on medium heat, add water, and keep a strainer on top of the pan.

Place the guava pieces in the strainer, ensuring the water does not touch them. Cover and steam for 15 minutes or until soft.

Once steamed, let the guavas cool completely.

Put the cooled guava pieces in a mixer grinder and grind to a smooth paste.

Use a fine strainer over a deep bowl and press the ground guava pulp through it to extract maximum pulp, discarding the remains in the strainer. You should get around 2 cups of guava pulp.

In a wide heavy-bottomed pan on medium heat, add the guava pulp and sugar, stirring with a wooden spoon.

Add a pinch of salt and stir continuously to prevent bubbling and splattering.

Once the mixture thickens, reduce the heat to medium-low and add the lime juice and orange food color, stirring well.

Add the butter or ghee and continue stirring to prevent burning and sticking.

Perform the line test: draw a line in the mixture with a spatula; if it holds without coming back together, it is ready.

For the cold water test, take a small portion of the mixture and roll it into a ball in cold water; if it holds its shape and is smooth, it is ready.

Remove the pan from heat once the mixture is ready and transfer it to a greased plate or tray, leveling it with a greased spoon.

Let it cool completely before unmolding it onto a greased cutting surface.

Use a greased knife to cut the perad into squares or desired shapes, cleaning and greasing the knife as needed to prevent sticking.

Store the cut pieces in an airtight container and consume within 15 days.
