Rinse the pork with salt, clean, and pat it dry.

Cut the pork into slices about 2 cm thick and pound them with a meat tenderizer.

For 1 kg of pork, prepare the marinade with 1 teaspoon salt, 1 teaspoon ground pepper, 1 tablespoon sugar, 1 tablespoon oyster sauce, 1 tablespoon soy sauce, 1 tablespoon fish sauce, 2 tablespoons Vietnamese caramel sauce, 3 tablespoons cooking oil, 1 tablespoon sesame oil, and 1 tablespoon annatto oil.

Mix the marinade ingredients well and pour over the pork slices, adding 2 tablespoons of lime juice.

Crush lemongrass, shallots, garlic, and chili, then add to the pork and combine well.

Let the pork marinate for at least 1 hour.

Prepare pickled vegetables by soaking shredded carrot and daikon radish in salted water for about 10 minutes, then rinse and drain.

Make the pickling sauce with 1/2 tablespoon sugar, 1 tablespoon vinegar, 1 tablespoon fish sauce, and 1 tablespoon water, mixing until the sugar dissolves.

Prepare the dipping sauce by combining 1 and 1/2 tablespoons sugar, 2 tablespoons fish sauce, 2 tablespoons vinegar, and 10 tablespoons water, simmering until it begins to boil, then let cool and garnish with minced garlic, chili, and ground pepper.

After marinating, grill the pork using an air fryer at 160° C (320° F) for 18 minutes, flipping halfway, then increase to 190° C (375° F) for another 8 minutes, flipping once.
