Marinate lamb shoulder with olive oil, garlic, oregano, lemon juice, salt, and black pepper for at least 2 hours.

Preheat grill to medium-high heat.

Place marinated lamb on the grill and sear for 5-7 minutes on each side until browned.

Transfer lamb to a roasting pan and add bay leaves, onions, and red wine.

Cover the pan with aluminum foil and roast in the oven at 180°C (350°F) for 1.5-2 hours until tender.

Add potatoes and tomatoes to the pan during the last 30 minutes of roasting.

Remove the foil and allow to roast uncovered for an additional 15-20 minutes until browned.

Let the lamb rest for 10 minutes before slicing.

Serve with crumbled feta cheese and chopped parsley on top.
