1 tbsp Thai red curry paste
10-12 medium shrimps, washed, de veined and cleaned
2 tbsps oil
2 tsps finely chopped garlic
½ tbsp grated ginger
¼ cup chopped spring onion bulbs
4-5 button mushrooms, sliced
1 small red capsicum, cut into thin strips
½ tbsp fish sauce
1-2 tsps soy sauce
1 cup coconut milk
2 cups fish stock
2 tbsps chopped spring onion greens
Crushed black peppercorns to taste
Salt to taste
Fresh basil sprig for garnish

Heat oil in a non-stick pan. Add garlic, ginger and spring onion bulbs and sauté for 1 minute.

Add button mushrooms and red capsicum and sauté for 1-2 minutes. Add Thai red curry paste and 2-3 tbsps water and sauté for 1-2 minutes.

Add fish sauce and soy sauce and sauté for 1 minute. Add coconut milk and mix well.

Add fish stock, mix and let it come to a boil.

Add the shrimp and mix well. Cook for 3-4 minutes.

Add spring onion greens, crushed black peppercorns and salt and mix well.

Serve hot garnished with crushed black peppercorns and basil sprig.
